Mislim da ne poznajem osobu koja ne voli lenju pitu. Obično ih lenja pita vraća u detinjstvo i asocira na bakinu i maminu kuhinju. Lenja pita koja je već godinama osvojila moje srce nije spremljena rukom meni drage i poznate osobe . Ni ne izgleda kao klasična lenja pita. Više je neki mutant lenje i američke pite. Probana pre više godina u jednoj kafe-poslastičarnici u Kotoru , ipak tera me da joj se svake godine vraćam. Nemojte me pogrešno shvatiti , volim ja klasičnu maminu lenju pitu ali ovu volim više. Ipak , šta da radite kada vam se jede pita a od nje ste udaljeni celih 600 km? Pa probate da napravite kopiju što sličniju orgianlu.
Posle dužeg eksperimentisanja mislim da sam uspela. Korica je cvrsta a ujedno se topi u ustima, fil od jabuka je mekan i mirisan , jabuke nisu dezintegrisane do neprepoznatljivosti , a orasi i suvo groždje cine ovu pitu savršenom. Za mene je lenja pita jedan od onih slatkiša koji traže svinjsku mast. Ako mast zamenite puterom ili margarinom, po meni to jednostavno nije to.
Pa da se bacimo na recept.
Potrebno je
(za okrugli kalup prečnika 28 cm)
600 gr oštrog brašna
3 veća jaja
1 1/2 kafene kašičice sode bikarbone
1 1/2 kafene kašičice cimeta
rendana korica dva manja neprskana limuna
240 gr masti
240 gr šećera
Umutiti penasto mast sa šećerom , pa dodati jaja i mutiti dok se sve lepo ne sjedini. Dodavati cimet ,koricu limuna pa sve lepo izmešati. Zatim postepono dodavati brašno koje ste predhodno promešali sa sodom bikarbonom i mutite dok ne dobijete mekano testo. Testo zamotati u prozirnu foliju i ostaviti u frižideru da se odmara minimun sat vremena. Peko papirom obložite dno i zidove kalupa za tortu . Na peko papiru uz pomoć modle iscrtajte krug čiji obim odgovara dnu i isecite ga. Taj krug nam treba za poklopac.
Fil:
1,2 -1,5 kg kiselijih jabuka , tipa Green Smith, Ajdara
100 gr grožđica koje ste veče pre ostavili da odstoje u rumu ili toploj vodi
100 gr krupno naseckanih oraha
5 kašika šećera
2 kašike cimeta
Jabuke operite, osušite pa ogulite. Precesite na pola i odstranite im središnji deo sa semenkama. Isecite ih na veće kocke. U većoj posudi izmešajte kockice jabuka, cimet, šećer, orahe i suvo grožđe.
Testo izvadite iz frižidera i podelite ga na tri dela. Jednom trećinom obložite dno modle , drugom trećinom zidove modle a trećom onaj krug peko papra koji ste nacrtali i koji će nam biti poklopac.Testo za poklopac dobro izbockajte i stavite u zamrzivač na 15 minuta. Lakše ćete rukovati zamrznutim testom. Sipajte fil od jabuka u testom obloženu modlu i odložite je u frižider dok je poklopac od testa u zamrzivaču.
Rernu zagrejte na 180°C.
Izvadite pitu iz frižidera i poklopac od testa iz zamrzivača i polako ga stavite preko jabuka i pritisnite rukama da legne na fil. Prstima spojite ivice zida pite i poklopca. Napravite mali Ievak od peko papira i zabodite ga u testo . Evo ovako kao Petra , da bi vlaga izlazila iz pite i da korice posle ne bi bile gnjeckave. Ili ako hoćete možete od testa za poklopac iseći trakice (kao što sam uradila ovaj put), slagala ih preko pite unakrsno i tako dobila poklopac u vidu rešetke. Tada nema potrebe za levkom jer će suvišna para izlaziti kroz okna rešetke.
Pecite 40-50 minuta. Pustite da se ohladi pa izvaditi iz modle. Pospite prah šećerom i služite. Meni je ipak bolja sutradan.

Lazy apple pie
I did not make
up the name of this dessert. We really call it lazy pie. Maybe because it is almost effortless and the results are so delicious. Lazy pie is very popular dessert in Serbia, Montenegro, Bosnia and Croatia.This pie is not traditional lazy pie.This particular pie is famous dessert from cafe Forza Kotor, Montenegro.
It is something between our lazy pie and american apple pie. I love it so much, so I tried to make something similar. And I succeed. :)
Ingredinats:
( for 28 cm cake pan)
For dough:
600 gr strong flour
3 eggs
1 1/2 tsp baking soda
1 1/2 tsp ground cinnamon
grated rind from 2 lemons
240 gr lard
240 gr sugar
For filling:
1,2 kg -1,5 kg apples, Green Smith
5 tbsp caster sugar
2 tbsp ground cinnamon
100 gr chopped walnuts
100 gr raisins (soaked in 1/3 cup rum, overnight )
Preparing:
In a large bowl, cream together lard and sugars until light. Beat in eggs ,pinch of salt, grated lemon rind, ground cinnamon and stir to combine well. Add flour mixture (mix flour with baking soda) gradually and incorporate at low speed. Wrap the dough into plastic and let rest in the refrigerator for a hour. Line a cake pan with baking paper. Divide the dough into 3 even balls. First ball press firmly against bottom of the pan. Second ball press firmly against side of the pan.
Wash,peel, halve and core the apples. Chopped them into 2 cm cubes. In large bowl, gently mix apples, raisins, walnuts with sugar and cinnamon and spoon it into crust-lined cake pan.On a baking paper, roll out the third ball of dough, and put it in the freezer for 15 minutes. To me, it is easier way to handle top crust. Use a pizza cutter to cut strips 1,5 cm thick. Criss cross the strips over the pie. Preheat oven to 180°C. Bake it for 40 - 50 min. When it’s done, allow it to cool before slicing in.
